Italian Pear Cake. A moist and soft cake, perfect to end a meal, for breakfast or whenever you need something sweet. A slice of heaven, soft and sweet just enough to be a real crowd pleaser!

Ingredients
2cupsflour00 or all-purpose
¾cupsugar
2uniteggs
8tbspbutter
2tbspricottafull fat
⅔cupmilkwhole
2tspbaking powder
1tspvanilla
4unitpears
1tspsalt
2tbsppowdered sugar
4tbspalmondslivered
Instructions
First, whisk together the eggs, sugar and vanilla. Slowly melt the butter. Then gradually add butter, 2/3 cup of milk. Mix well. Then add 2 tablespoons of ricotta, mixing it slowly to avoid the ricotta to liquefy.
Finally, add sifted yeast, cinnamon and flour until you get a soft dough.
Continue peeling the pears. Cut a pear into small pieces, add them to the dough and turn well.
Line a springform pan with parchment paper and butter the sides. Pour the batter into the springform pan and place the pear wedges in a radius on top. Sprinkle with Slivered Almonds on top.
Bake the cake in a preheated oven at 180 degrees for about 45 - 50 minutes or until a toothpick comes out clean*. If you find that the cake is turning over too much, cover it with a foil. Sprinkle it with powdered sugar! Your fluffy pear cake is ready to serve! Mangia.
Notes
Serve this cake with a bit of whipped cream or a dollop of mascarpone.
If you feel fancy, dust the cream with extra cinnamon.
