Peach Bellini Cocktail is the emblem of the classy Italian aperitive. This recipe is made with fresh white peaches blended into a puree. It is a great drink to sip in the summer afternoon or during brunch.

½ cup peach puree 1 cup prosecco dry 1 tsp agave syrup
To make peach puree you will need to peel the peaches, remove the stone and chop them in pieces.
Proceed by placing them in a blender with 1 teaspoon of agave syrup. Blend until they are smooth and evenly combined into a puree.
Once your puree is ready, you divide equally the peach puree into the flutes. Then you top each one with equal part of prosecco.
As a garnish, you can use a slice of peach, cut it in the middle and place it on the edge of the glass
