Ingredients for the smoked recipe Salmon Mascarpone Linguine
To make this recipe you will need:
Pasta: I used dry pasta, in specific I used linguine a sort of long noodle, slightly flattened. I think a long-shaped pasta will make a nice pasta swirl for a wow presentation. But you could also use fresh pasta in the form of fettuccine or tagliatelle.
Smoked Salmon: I usually opt for a good Norwegian or Scottish smoked salmon. Another great source is Canadian smoked salmon from Nova Scotia.
Mascarpone Cheese: It is a soft Italian cheese made from cream cheese and is a typical product from the Lombardy region. You can use it in sweet and savory preparations and it is available in well-stocked grocery stores.
Pink peppercorns: I love their pink hue! In reality, pink peppercorns are berries from a tree, but they are called peppercorns because their shape resembles that of peppercorns. They are very soft and I usually break them by hand and sprinkle them over the dish only at the end. They are a great touch to salmon, pork and veal dishes, especially when a creamy ingredient is involved.
Dill: In my opinion, no dish is complete without a touch of fresh herbs, they add extra flavor that just enhances the dish. Dill in this case will add that touch of freshness and an anise flavor.
Lemon zest: Lemon zest is the flavorful colorful part of any citrus fruit peel. Just grate it at the end to release all its aroma and flavor, rounding out the rich creaminess of the dish. It literally adds its magic to the dish. If you want more zest, add a few lemon slices on the side so everyone can calibrate their desired level of zest.
Butter: a bit of butter is essential to cook the smoked salmon, and to coat the pasta, resulting in using less Mascarpone, well-known to be high in fat and a bit heavy, but so good!
How to cook Smoked Salmon Mascarpone Linguine
First, bring a pot of water to a boil. When the water is boiling, add 2 teaspoons of salt and then add the noodles.
Now prepare the sauce: Melt a tablespoon of butter in a pan. When the butter is melted, add the smoked salmon cut into pieces. Let it “cook” for 5 minutes, then add the mascarpone. Now the pasta should be ready. Add the pasta to the pan and turn off the heat. The heat of the pasta and the pot still hot, will make the Mascarpone cream transform into a velvety cream that will perfectly coat your linguine. Mix well the pasta and ddd the grated lemon zest and the dill.
Plate the pasta and add more lemon zest, dill and the crushed pink peppercorns. Bring the dish YOUR to the table and SHARE it with YOUR LOVED ONES. For a dish that will please your palate and save you time cleaning up!
Smoked Salmon Mascarpone Linguine Substitutions and variations
You can substitute cubed fresh salmon for the smoked salmon. In this case, wait 10 minutes for the salmon to cook.
Pasta: Looking for something even more delicious? Homemade fettuccine or pappardelle are great.
If you like a tangy taste, add a squeeze of lemon. Instead of dill, you can also use mint, parsley or basil.
If you want to add some greens: Add some arugula or spinach at the end. They wilt in seconds and add an extra layer of freshness to the dish.

Serving suggestions
This is definitely a main dish that you should enjoy in every bite. You can have an appetizer beforehand, perhaps a simple bruschetta, and serve it with a side salad.
Smoked Salmon Mascarpone Linguine Wine Pairing
This dish pairs well with a white wine like Trebbiano from Tuscany. Its lemon and shellfish notes pair very well with the dish’s ingredients and balance out the creaminess of the dish.
Another option is a rosé wine from Puglia called Rosato Negroamaro, which with its fruity notes goes well with seafood and especially salmon.
