July is peach season, and when I think about peaches my mind directly goes to Bellini Cocktail! What is a Bellini? Bellini is a cocktail made with white peach puree and prosecco, and it was born in Veneto, the region I come from, so how I cannot love this drink?
Bellini is a great brunch drink or afternoon drink, to enjoy in the summer season. But let’s discover how to make the best Bellini drink!
Where does the Bellini cocktail come from?
Peach Bellini Cocktail is the emblem of the classy Italian aperitive created in the 30s’ by Mr. Cipriani, founder of the famous Harry’s Bar in Venice. He named it after the color of Priest toga on a painting made by Bellini.
Nowadays this cocktail is well known and served internationally.
Bellini cocktail recipe ingredients
To make a great Bellini you need great white peaches! So, my tip before you go to the grocery store is to look for peaches that are plump, ripe and with no marks on their skin – which means you will have some part of the fruit very soft and brown.
When you pack your grocery, be careful and treat them as a delicate flower, to avoid the fruit to smush and be disappointed once you get home.
Peaches are low in calories, rich in antioxidants and they have a small amount of mangnesium and vitamin B. A bonus of eating peaches is that they aid the skin to retain moisture, thus making your skin more elastic. So drinking bellini, is a bit like drinking a beauty potion!
The other key ingredient is Prosecco wine, possibly dry and a bit of agave syrup. As you can see the ingredients are simple, fresh and easy to assemble together. Let me share the steps I follow to make this refreshing and fizzy Italian cocktail.
How to make a Bellini
To make Bellini you will need to peel the peaches, remove the stone and chop them in pieces. Then you proceed by placing them in a blender.
Blend until they are smooth and evenly combined into a puree. Once your puree is ready, you take 2 oz of it and add it to a flute, topping it with 4 oz of prosecco.
As a garnish you can use a slice of peach, cut it in the middle and place it on the edge of the glass. You can also freeze you peach slices and let them go in the drink, so that they will maintain it cooler.
Bellini Cocktail variations
In case you do not drink, you can make Bellini mixing peach puree with a sparkling non-alcholic drink.
You can also make Bellini with other fruits, according to the season. The probably most popular variation is with oranges so that you will have a Mimosa. But there are other great cocktails, for example, mandarin is great to make a Puccini in the fall, or strawberry are best for a Rossini at the beginning of Summer. Or you can just be creative and try with raspberries or pears.

- 1/2 cup peach puree
- 1 cup prosecco dry
- 1 tsp agave syrup
Instructions
- To make peach puree you will need to peel the peaches, remove the stone and chop them in pieces.
- Proceed by placing them in a blender with 1 teaspoon of agave syrup. Blend until they are smooth and evenly combined into a puree.
- Once your puree is ready, you divide equally the peach puree into the flutes. Then you top each one with equal part of prosecco.
- As a garnish, you can use a slice of peach, cut it in the middle and place it on the edge of the glass
