June has passed by so quickly that I almost forgot to wrote my seasonal post “what to cook in June”! Let me tell you that this months brought lots of celebrations in my life: 1 year in NYC, our renovation finally ended, we received our goods from Dubai and we are now settling into our new home!
June brings a lot of fresh produce and it’s a wonderful time to eat the full rainbow the nature gives us. Whether you are looking for easy weeknight dinners or refreshing salads for the warmer days, here you can find Italian easy recipes that use seasonal produce. I am very supportive of cooking seasonally not inly because it’s sustainable but also because it follows the classic Mediterranean diet.

CARROTS

PEPPERS
Peppers are always a controversy! Some people love them, some other hate them. I must confess that I was used to love only my dad roasted peppers and then with years I expanded a bit my culinary taste so that now I turned into a lover! I recommend you to make these Simply Roasted Peppers as it’s the base for many other recipes, such as the Bruschetta with Peppers , Anchovies and Bufala.
STRAWBERRY

TOMATOES
I must confess that when it comes to tomatoes I am one of the pickiest person! Not sure it is an Italian thing, but they have to be firm, plump and with lots of meat!
