Pistachio Crusted Salmon. An effortless dinner that seems fancy but requires only a few pantry ingredients. The crunchiness of the pistachio crust is complimented by the flaky salmon meat and the combination of mustard, lemon zest and honey will leave everyone satisfied.

I must confess that I grew up eating lot of seafood, especially sea bass, clams and shrimp. Salmon appeared on my table only later and now I am baking it at least once a week. This is one of the latest salmon recipe I made, and my taste tester approved it…so I decided to share it and hopefully help you to make a delicious recipe with an Italian twist.

Pistachio Crusted Salmon Ingredients

Salmon: Salmon is definitely a superfood thanks to its high levels of omega-3 fatty acid, which among the many benefits reduce inflammation. Salmon is therefore a great fish to add to your weekly routine.

An important part of this pistachio crusted salmon recipe is buying a great piece of fish! High quality fish is important to taste this recipe in its fullness. Here are some tips.

Fresh salmon is best. You can find decent frozen salmon. But for the very best salmon, buy it fresh from your local seafood counter. You can buy a big fillet or you can look for already portioned salmon filets.

Buy wild caught salmon. Fish that is wild caught in your country is usually a sustainable choice and wild salmon from the Pacific Ocean is of great quality.

Coho is a good choice. It’s a good option in terms of price and it has a mild flavor. Of course, King salmon is incredible but more of a splurge.

Avoid Atlantic salmon as it is typically farmed salmon.

Pistachios: prefer raw, unsalted pistachios. Pistachios are very popular in Sicily, very fanous are pistachios di Bronte, an IGP quality well know around the world and used in many sweets and salty preparations.

Breadcrums: prefer plain breadcrumbs or make your own.

Mustard: I recommed Dijon mustard, which will add a bit of piquant taste to this recipe.

Honey: choose raw honey, to balance the spiciness of the mustard.

Lemon: zest and juice will enhance this dish, adding a clean taste.

What Fish Can I Use Instead of Salmon for this recipe?

This recipe is delicious with salmon fillets. If you prefer other fish these great substitutes are:

– Cod: prefer wild caught.

– Mahi-Mahi: which is meatier and thicker.

– Striped Bass, also known as rockfish. Very common in the Atlantic.

– Sea bass: delicate and delicious, will be a lighter option.

How to make Pistachios Crusted Salmon recipe?

This pistachio crusted salmon makes a delicious dinner recipe in few easy steps:

– Preheat the oven to 375°F.

– Start by mixing together the garlic, chopped pistachios, breadcrumbs and lemon zest. Place the pistachio mixture on a plate, making sure to even it.

– Just mix together in a small bowl the lemon juice, dijon mustard and honey, brush it on top of the salmon fillets.

– Place salmon fillets skin side down on top of parchment paper and pop it in the oven and it should take between 10 and 15 minutes to bake.

– Serve it with a mixed salad of greens, fennel and radish and some lemon wedges.

When do you know the salmon is ready?

Cook until the salmon just starts to flake when pricked with a fork. The internal temperature should measure 125 to 130 degrees Fahrenheit in the center of the fish. Be careful not to overcook. I prefer the salmon cooked to medium: to us, there’s nothing worse than a dry piece of fish. Keep an eye on it and don’t overdo it!

Ingredients

  • 1 lb salmon wild
  • 1/3 cup pistachio unsalted chopped
  • 3 cloves garlic minced
  • 2 tsp breadcrumbs panko
  • 2 tsp lemon zest
  • 1 tbsp honey
  • tbsp dijon mustard
  • 3 tbsp lemon juice

Instructions

  • Preheat the oven to 375°F.
  • Start by mixing together the garlic, chopped pistachios, breadcrumbs and lemon zest. Place the pistachio mixture on a plate, making sure to even it.
  • In a bowl, mix together the mustard, honey and lemon juice.
  • Place the salmon skin side up on top of the pistachios mixture and press it gently to make sure the mix adheres to the salmon fillets.
  • Place salmon fillets skin side down on top of parchment paper and pop it in the oven, for 10-15 minutes. Bake it until the internal temperature reaches between 125 to 130 degrees Fahrenheit in the center of the fish.
  • Place the fish on a plate and serve with a fennel, radish and greens salad.
